Northern Thai Food

In northern Thailand, the staple is glutinous (or sticky) rice, which should be available at just about every local restaurant in Chiang Rai. Northern Thai food is sweet, spicy, salty, sour and bitter, while letting fresh ingredients shine on top of the dish.

The cuisine in northern Thailand is influenced by Yunnan cuisine and Burmese cuisine, and it is least spicy, compared to the central or southern part of Thailand. The most common sauces used in dishes and as dips are made from chilies.

The equipment that is mainly used by a restaurant or street vendor to cook noodles, soups, curries etc. are wok, pan, and pressure cooker. To make chili dips, they use a mortar or a food processor.
